Basil Spinach Chicken Soup
1-2 Tbsp. olive oil
1 clove garlic, crushed
1 leek, cleaned & chopped
1-2 zucchini, chopped
salt & pepper to taste
2 C. chicken stock (homemade if possible)
2 Tbsp. basil
2 C. spinach, chopped
2 C. cooked chicken
Cream to tasteIn a stock pot, saute garlic, leeks, zucchini in olive oil until softened, season with salt & pepper. Add 1 C. chicken stock, cover and simmer until veggies very tender, 8-10 minutes. Transfer to blender or use stick blender to puree. Transfer back to stock pot and stir in remaining chicken stock, spinach, and cooked chicken. Cook until heated through, and add cream to taste.

Just make sure to only eat the amount you want for the FP points (I know, no fun).

InactiveMarch 21, 2014 at 12:20 pmPost count: 27I finally started carving something sweet and made the FT cheesecake with berries and cream, only I made it with stevia. It doesn’t taste like the real thing but it was good. Two other family members ate it and liked it.
