Hello, I have bought the book and just started my daughter on the diet who suffers from gerd. I have a question about fats. I know you say they can be discounted and do not perhaps affect gerd as much as we have been told, but I was just thinking, as a Type 1 diabetic (me not my daughter) I have always been told fats can actually slow down the GI of other foods – so would this mean that for example frying a low FP food could potentially turn the same food into a moderate FP food?
