Thanks JI – at this point I think I will need that ice cream three times a day (or more). I started having “mini” smoothies of 1/2 c. carton coconut milk (unsweetened, 2.5g. fat, 0g. carb per 1/2 cup), 1/8 c. heavy cream, splash of unsweetened kefir (sometimes), dash of vanilla extract, 3/4 tsp. dextrose (was not adding that before, but trying to add calories)- very tasty. Could add a strawberry too. I do enjoy dry red wines, but found they aggravated reflux before (maybe try again now). I am just flabbergasted that I could be losing so much weight so fat while eating this much fat, and lots of food in general as I try to eat as much as I can without overfilling belly.
