Yes, it seems to be a birth defect. Essentially, part of the stomach lining is in the esophagus. Easily overlooked during most gastroscopies. It explains the throat issues, constant mucus and ear aches.
When I started on the diet I initially lost 20 lbs, felt quite weak etc., but it did level off and I have stayed at the same weight for some time. It takes a while for the body to switch over to get energy from fat rather than the carbs. There is a very good website called aboutlowcarb.com that explains a lot. Stick with it!
